The menu draws from Japan’s culinary traditions — robata-fired plates, delicate raw preparations, and bold, umami-driven flavours — paired with a cocktail programme rooted in Japanese spirits and technique. Around it, the room does its own kind of storytelling: low light, walls lined with vinyl, and a bar built for
